California

Yeah, we got to go on a vacation! To California! (Luckily I have a sister in California who let us stay with their family...thanks Amy!)

We got to go to the beach twice. We were warned of the "June Gloom", where it's overcast in the morning. I just didn't expect it to be so cold! But as you can tell from the pictures, the kids loved it and I enjoyed watching them and getting my legs wet.


Mckenzie got buried in the sand. It was her #4 birthday! She now says that she wants to go to California every year for her birthday!


We were trying to get the kids to go in the water.


Mckenzie found a shell that she liked. We found that when you go in the morning, there are more shells lying around.

The Zoo

We were able to go the zoo about 2 weeks ago. We just happened to be at the library right before it opened and got a culture pass...love them! And since the weather hadn't been unbearable, we went.

Squash

So our garden is producing squash and I've been trying not to waste it. Here's a yummy casserole that I found online and my family seemed to like:

Squash Casserole

3 cups squash
1 medium onion
1/2 bag stuffing mix
1 can cream of chicken soup
1 8oz. container sour cream
salt and pepper to taste
1-2 cloves garlic

Carmelize onions in some olive oil (about 8 min.) Place in casserole dish. Cook garlic cloves in olive oil for about 30 sec. Add the squash and cook until tender (about 10 min.) Mix all ingredients together, saving some stuffing mix for the top.

Put in a casserole dish and top with remaining stuffing.

Bake at 350 for 35-40 min.


I plan on making this again!
