I just thought that I'd share this recipe that I made for dinner last night. I liked it and my family all liked it too. It has sausage in it (that I found on sale) but it also has a vegetable (which makes it healthy, right?) Anyways, it's easy and good (it passed the kid test) so I'll pass it on:
Italian Sausage Rigatoni
1 pkg. (19.76 oz) mild Italian sausage links, grilled and coin-sliced
1 pkg. rigatoni pasta (I used penne)
3 tbsp. olive oil
2 cloves garlic, minced
1 large red pepper, chunked and sauteed (I used my frozen corn and it tasted fine)
1 jar (26 oz) of your favorite pasta sauce
2 tbsp. parsley, chopped (didn't have this)
Cook sausage according to package directions. Keep warm. Cook the rigatoni according to directions, keep warm. In a large pan, place olive oil and garlic, saute lightly for 30 seconds. Add peppers and cook until crisp-tender. Combine cooked sausage and pasta sauce with peppers and heat until warm. Mix with the pasta or serve separately. Top with fresh parsley. Serve warm.
This reminds me a lot of my favorite dish at RigaTony's (when it used to be near us!)

i found this recipe a couple weeks ago. it sounds just about the exact same. I loved it. we dont like red sauce so I used some garlic and Alfredo sauce. it turned out really good and I've added it to the "like" stack I have. yummy yummy!
